Island Sunrise
On my trip to Jamaica I became obsessed with pineapples. Pineapple drinks, pineapple for breakfast, pineapple snacks. They were so sweet and ripe and perfectly juicy! That being said, I now get anything from a menu that has pineapple. A few months ago I had a turmeric and pineapple drink from Grain & Berry, and it became my mission to try and replicate it. I didn’t ever think to combine turmeric with pineapple but it brought me right back to Jamaica!
This drink is so sweet and refreshing, it’ll make you feel like you’re in your own beautiful tropical island. The perfect summer drink! Whether you are laying out by the beach with your friends ort in your backyard, this drink will transport you to a relaxing getaway. And as if that’s not enough, you will get an extra boost to your wellbeing with the anti-inflammatory properties in fresh turmeric and great micronutrients from both the carrots and pineapple!
Pineapple
Where I live, pineapples in stores don’t tend to be ripe enough, and unfortunately pineapples don’t get sweeter after they’ve been cut from the tree. I was very excited when I found out Wholefoods sells pineapples from Costa Rica! They sell it already cut and it is perfectly ripe!
Tips for shopping for a pineapple: the further the yellow has traveled to the crown the sweeter and juicier it will be.
Carrots
I use baby carrots for this recipe simply for the convenience of not having to peal and chop carrots. I also find them to be a bit sweeter, but when it comes to which carrots to use that would be up to preference.

Vegan Paleo
INGREDIENTS
• 1 small/medium pineapple
• 2 inch turmeric root (you can peal skin off if preferred)
• 1 heaping cup baby carrots
INSTRUCTIONS
• Place all ingredients in a high powered blender and blend until smooth.
• Strain using a large cheese cloth, thin dish towel or nut milk bag. Lay cloth over a large mixing bowl, pour half of the mixture from blender, gather corners of cloth carefully, and lift. Squeeze until liquid it extracted and discard pulp. Repeat.
• Once the beverage is strained, serve over ice.
