4 Easy and Delicious Waffle Toppings
These waffles have been one of my staples for busy weekday mornings. I love breakfast food. It might even be my favorite! So to skip breakfast is not an option for me, haha. Don’t get me wrong, I sometimes do fasted cardio mornings, or wake up too early to be hungry, but even if my first meal of the day is at 1pm I will make sure one of my meals is breakfast food! The beauty of these waffles is they are super easy-mode, quick, and require very few ingredients. If you prep ahead of time, you can make them as you’re rushing out the door, or better yet, as a part of a much larger sit-down brunch (or dinner, I ain’t judging).
Some toppings are higher in fat and protein, others in carbs, so whatever your body needs to be fueled, or if you need a quick snack in between meals to meet your macros, I got you!
For this recipe I used Birch Benders Paleo Toaster Waffles, but any clean waffles or even pancakes will do! I have also used Simple Mills Almond Flour Pancake and Waffle Mix and it’s delicious!
Apple Walnut
The ratio here is going to be 1:1 apples to tablespoons of maple syrup, unless you like them sweeter or are using a tart apple. Slice apples about a quarter of an inch thick. You can either leave skin on or peel. I personally prefer skin on (lots of nutrients in the skin and I like some texture in my cooked apples). Place apples in a small saucepan with maple syrup and cinnamon over medium heat, covered. Stir occasionally and cook for about 10 to 15 minutes, or until desired tenderness. Once cooked, you can either top your waffle with cooked apples, walnuts and a drizzle of maple syrup, or you can store the cooked apples in a jar for about 1-2 weeks in the fridge, and warm them back up when needed.
Nut Butter & Banana
This ones quite self explanatory… Spread nut butter of choice on waffle, and top with sliced naners and a drizzle of honey! Such a simple, yet delicious combination.
PB & J
Add berries, coconut sugar, and a light splash of lemon juice to a small sauce pan over medium heat, covered. Bring mixture to boil, reduce heat to medium low and add about a teaspoon of tapioca starch. Mash whole berries with a spatula and continue mixing until the jam has thickened. Keep in mind the jam will continue to thicken once cooled. Top waffle with your favorite nut butter and warm jam, or refrigerate jam in glass jar for future use.
Avocado Waffle
Mash the half avocado in a small bowl, add salt, and spread over waffle. Cook your eggs and place over the avocado spread. Season with Everything But the Bagel seasoning, and maybe even add some hot sauce, yum!
